Feta & Spinach Stuffed Grilled Cheese (Print out)

Thick-cut bread filled with garlicky spinach and tangy feta, toasted golden for a melty, flavorful sandwich.

# What You'll Need:

→ Vegetables

01 - 2 cups fresh spinach, chopped
02 - 1 garlic clove, minced

→ Dairy

03 - 1/2 cup crumbled feta cheese
04 - 1/2 cup shredded mozzarella cheese
05 - 2 tablespoons unsalted butter, softened

→ Bread

06 - 4 thick slices country-style or sourdough bread

→ Seasonings

07 - 1 tablespoon olive oil
08 - 1/4 teaspoon black pepper
09 - Salt to taste

# How to Make It:

01 - Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 30 seconds until fragrant. Add chopped spinach and cook, stirring constantly, until wilted, approximately 2 minutes. Season lightly with salt and pepper. Remove from heat and allow to cool slightly.
02 - In a mixing bowl, combine the sautéed spinach with crumbled feta cheese and shredded mozzarella cheese. Mix thoroughly until evenly distributed.
03 - Lay out all four bread slices. Evenly distribute the spinach-feta mixture over two slices, then top each with a remaining bread slice to form two complete sandwiches.
04 - Spread softened butter evenly over the outside of each sandwich.
05 - Heat a clean skillet or griddle over medium-low heat. Place sandwiches in skillet and cook 3 to 4 minutes per side, applying light pressure with a spatula, until bread achieves golden brown color and cheese is completely melted.
06 - Remove sandwiches from heat and allow to rest for 1 minute. Slice diagonally and serve warm.

# Expert Advice:

01 -
  • The way fetas salty creaminess balances with sautéed spinach creates something way more sophisticated than your average lunch
  • Thick country bread gets perfectly crisp while protecting that molten cheese filling inside
02 -
  • Medium low heat is your friend here, high heat burns the bread before the cheese has time to melt into that perfect consistency
  • Squeeze excess moisture from the cooked spinach before mixing with cheese, otherwise your bread will get soggy no matter how well you butter it
03 -
  • Butter the bread all the way to the edges, those crispy buttery corners are arguably the best part
  • Use a knife to gently press the sandwich while grilling, helping the cheese distribute evenly throughout
