01 - 1.5 cups mixed pitted green and black olives
02 - 7 oz feta cheese, cut into 0.4 inch cubes

→ Marinade

03 - 3 tablespoons extra virgin olive oil
04 - 1 tablespoon freshly squeezed lemon juice
05 - 1 teaspoon dried oregano
06 - 1 teaspoon fresh thyme leaves (optional)
07 - 1 small garlic clove, thinly sliced
08 - 0.5 teaspoon red pepper flakes (optional)
09 - Freshly ground black pepper, to taste

→ Garnish

10 - 2 tablespoons fresh chopped parsley
11 - Zest of half a lemon

# How to Make It:

01 - In a medium bowl, place the mixed olives and cubed feta cheese together.
02 - Whisk olive oil, lemon juice, dried oregano, thyme leaves if using, garlic slices, red pepper flakes if desired, and black pepper in a small bowl.
03 - Pour the prepared marinade over the olives and feta, gently mixing to evenly coat while preserving feta cube shape.
04 - Cover the bowl and refrigerate for a minimum of 30 minutes or up to 4 hours to develop flavor.
05 - Bring the mixture to room temperature, sprinkle with fresh parsley and lemon zest, toss lightly, and serve immediately.
