08 - Red gel food coloring
09 - Green gel food coloring
10 - 1/3 cup colored sanding sugar, optional
# How to Make It:
01 - In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
02 - In a large bowl, beat butter and sugar until light and fluffy, about 2-3 minutes.
03 - Incorporate egg and vanilla extract into the butter mixture until combined.
04 - Gradually add the flour mixture, mixing just until incorporated without overworking.
05 - Separate dough into three equal portions; leave one plain, tint one with red gel coloring and another with green gel coloring until evenly colored.
06 - Roll each dough portion between parchment sheets into rectangles approximately 9 by 6 inches; chill for 20 minutes.
07 - Layer the dough sheets with plain on bottom, red in the middle, and green on top; trim edges to align.
08 - Roll the stacked dough tightly from the long edge into a log, removing parchment as you roll; optionally roll log in colored sanding sugar.
09 - Wrap the dough log in plastic wrap and refrigerate at least 2 hours until firm.
10 - Preheat oven to 350°F and line baking sheets with parchment paper.
11 - Cut chilled log into 1/4-inch thick rounds and place them 2 inches apart on baking sheets.
12 - Bake slices for 9 to 11 minutes until set but not browned; cool on sheet for 3 minutes then transfer to wire rack to cool completely.
