02 - 1 cup shredded cheddar cheese
03 - 1/2 cup shredded mozzarella cheese
04 - 1/2 cup finely diced bell pepper, red or yellow
05 - 1/4 cup finely chopped baby spinach, optional
06 - 2 teaspoons olive oil or melted butter

10 - 1 tablespoon fresh lime juice
11 - Salt and pepper to taste

# How to Make It:

01 - Combine diced tomatoes, red onion, cilantro, and lime juice in a bowl. Season with salt and pepper. Stir well and set aside to allow flavors to meld.
02 - Lay out tortillas. Sprinkle half of each tortilla with cheddar, mozzarella, bell pepper, and spinach if desired. Fold each tortilla in half to create a semicircle.
03 - Heat nonstick skillet over medium heat and brush with olive oil or butter. Place folded tortillas in skillet, working in batches if necessary. Cook 2 to 3 minutes per side until golden brown and cheese is melted.
