Golden pastries filled with a blend of spinach, feta, and herbs for a tasty Mediterranean snack or appetizer.
# What You'll Need:
→ Filling
01 - 10 oz fresh spinach, washed and chopped
02 - 1 tbsp olive oil
03 - 2 cloves garlic, minced
04 - 5 oz feta cheese, crumbled
05 - 3.5 oz ricotta cheese
06 - 1 small onion, finely diced
07 - 2 tbsp fresh dill, chopped (or 1 tbsp dried dill)
08 - 1/4 tsp ground nutmeg
09 - Salt and pepper, to taste
→ Pastry
10 - 2 sheets puff pastry (about 1 lb), thawed if frozen
11 - 1 egg, beaten (for egg wash)
# How to Make It:
01 - Preheat oven to 400°F and line a baking sheet with parchment paper.
02 - Heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic; sauté until fragrant and translucent, about 2 to 3 minutes.
03 - Add chopped spinach and cook, stirring frequently, until wilted and moisture evaporates, approximately 4 minutes. Remove from heat and allow to cool slightly.
04 - In a mixing bowl, blend cooked spinach mixture with crumbled feta, ricotta, chopped dill, ground nutmeg, salt, and pepper until evenly incorporated.
05 - Unroll puff pastry sheets on a lightly floured surface and cut each sheet into 4 equal squares, yielding 8 squares total.
06 - Place 2 to 3 tablespoons of filling in the center of each square. Fold over to form a triangle or rectangle and press edges firmly with a fork to seal.
07 - Transfer sealed pies to the prepared baking sheet and brush tops with beaten egg to promote a golden crust.
08 - Bake for 20 to 25 minutes until puffed and golden brown.
09 - Allow pies to cool slightly on a wire rack before serving to ensure filling sets.
