# How to Make It:
01 - Preheat oven to 350°F. Grease and line two 9-inch round cake pans with parchment paper.
02 - Whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger in a large bowl.
03 - Beat eggs, granulated sugar, and brown sugar until light and fluffy. Gradually mix in oil, applesauce, and vanilla extract.
04 - Fold the dry mixture into the wet ingredients until just combined. Stir in grated carrots, nuts, and raisins if using.
05 - Divide batter evenly between pans. Bake for 35 to 40 minutes until a toothpick inserted into the center comes out clean.
06 - Allow cakes to cool in pans for 10 minutes before transferring onto wire racks to cool completely.
07 - Beat softened cream cheese and butter until smooth. Gradually add powdered sugar, vanilla, and salt, mixing until fluffy.
08 - Place one cake round as the face. From the second cake, cut two symmetrical ovals for ears and use remaining pieces for bowtie or feet.
