# How to Make It:

01 - Heat olive oil in a large oven-safe skillet over medium heat. Add diced onion and sauté for 2 to 3 minutes until softened.
02 - Add minced garlic, diced red bell pepper, and zucchini to skillet. Cook for 4 to 5 minutes until vegetables begin to soften.
03 - Stir in corn kernels, halved cherry tomatoes, and chopped spinach. Sauté until spinach wilts, approximately 2 minutes.
04 - Add rinsed black beans, tortilla strips, chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Mix thoroughly to combine.
05 - Sprinkle shredded cheese evenly over the skillet contents. Cover with lid or foil and allow cheese to melt for about 2 minutes.
06 - In a blender or food processor, combine avocado, Greek yogurt, lime juice, chopped cilantro, salt, and pepper. Blend until smooth and creamy.
07 - Remove skillet from heat. Garnish with fresh cilantro, serve with lime wedges, and top with a generous dollop of avocado yogurt sauce.
