# Expert Advice:

01 -
  • It comes together in 25 minutes, which means you can have restaurant-quality dinner on a random Tuesday without ordering delivery.
  • The sauce is creamy and spicy at the same time, hitting that sweet spot between comfort and heat that makes you want another bowl.
  • You can eat it warm right after cooking or chill it for a completely different meal the next day.
02 -
  • The peanut butter needs to be mixed with a little warm water first before whisking it with the other ingredients, otherwise you'll be fighting lumps and losing your mind.
  • Don't skip rinsing the hot noodles under cold water—it stops the cooking process and keeps them from turning into a sticky mass.
03 -
  • Toast your own peanuts from raw and chop them just before serving so they're still crispy instead of going soft from the steam of the noodles.
  • Keep the lime wedges separate and let everyone squeeze their own—people are weirdly particular about how much citrus they want, and this prevents arguments.
