- Christmas Leftovers: 100 g roast turkey or chicken sliced, 50 g cooked stuffing crumbled, 50 g roast potatoes sliced or chopped, 30 g cooked vegetables (e.g. carrots, peas, Brussels sprouts) chopped, 2 tbsp gravy (optional for drizzling)
- Fresh Additions: 1 small handful fresh spinach or lettuce leaves, Salt and black pepper to taste
Instructions
- Step 1:
- Warm the tortillas in a dry pan for 30 seconds on each side or microwave for 10 seconds until pliable.
- Step 2:
- Spread mayonnaise or cranberry sauce over each tortilla leaving a 2 cm border.
- Step 3:
- Layer spinach or lettuce then add turkey/chicken stuffing roast potatoes and vegetables.
- Step 4:
- Drizzle with gravy if using and season with salt and pepper.
- Step 5:
- Fold in the sides roll up tightly from the bottom and slice in half.
- Step 6:
- Serve immediately or wrap in foil for later.
